Kim and Oliva's Fiesta {the recipes}

 Here are the delicious recipes!
Also, I wanted to add a photo of the very festive invitations.
Love the fabric fringe.

Watermelon skewers with cotija


Jalapeno grilled cheese
Kim changed the cheese mixture on the grilled cheese sandwich from goat cheese to:
1 oz goat cheese
1oz mascarpone cheese
zest and juice of one lime
2 TBS chopped cilantro

Mix all ingredients together and use in place of the goat cheese in the recipe.  
Works best on a panini press.

Olivia and Kim's FIESTA

 Maybe it's all the sugary drinks or the stimulating conversation, but I can never sleep after Gourmet Club.  So I usually get the pictures up right away!
Our second meeting of the year was hosted by Olivia Burr and Kim Roberts and the theme was Fiesta.  It was SO fabulous!

They went all out decorating the front of Olivia's cool Capitol Hill row house.
 Flower pots up the stairs.
 Appetizers in the sun, including fresh horchata.

Our lovely hostesses:
 Watermelon with cilantro and feta. So flavorful and refreshing.

 These sandwiches were delish. SO many yummy ingredients, including bacon, goat cheese, mascarpone, jalapeno, apricot preserves...
 The sandwiches had a tasty kick to them, and the horchata was a perfect pairing to cool off the tongue. :)

Everyone looked so festive, so I had to snap a pic of our shoes and pedis.

The Menu:

I tried the Cola Champagne flavor. Yum.  Tasted like cream soda.

Chilled avocado soup.  So creamy and good.
The guests...








Mexican street corn.  Oh I could have gone home happy just eating that!

Chipotle Mahi Mahi, mango salsa, black beans, Mexican corn cakes.  So fresh and delicious and colorful.

Tres Leches coconut trifle.  With crunchy coconut on top.  It tasted as good as it sounds!  

Take home goodies in addition to the adorable cacti--Mexican fudge, so cutely packaged.

What a fantastic dinner--I was so blown away by the whole evening!  The meal was so incredibly tasty and the decor was absolutely perfect, and it's always so fun to catch up with friends.  Thank you so much, ladies!
